Today, I will be sharing a simple meal you should be able to prepare quickly.
Let’s get into it.
INGREDIENTS
Rice
Eggs
Soy sauce
Garlic and ginger powder
Salt
Onions
Black pepper
Seasoning cube
Thyme
Curry
Dried vegetables
Vegetable oil
Crayfish
PROCEDURE
I parboiled my rice overnight because it could be quite starchy.
The next morning, I drained it and cooked. Parboiling it first before rinsing off to cook again.
If you have left over rice, you can simply skip the cooking part and use it instead.
After it has cooked well. Set aside.
I used three large eggs. Broke them into a bowl, added black pepper, a pinch of salt, garlic and ginger powder, thyme, curry and soy sauce then whisked properly..
Vegetable oil on pan at low heat then added whisked eggs and stirred ( bubbly eggs style).
I allowed it to heat for 2 minutes then added cooked rice (ration as preferred).
Stirred.
Added crayfish and seasoning cube and dried vegetables and stirred for 5 minutes.
Afterwards, voila!
Ready to be served.
Will you try this?
Do not forget to leave a thumbs up and subscribe for more.
I have a lot of smoothie recipes to share with you.
I’ll share this recently made one with and share the rest later.
Ingredients
Tiger nuts (dried or fresh)
Sweet mangoes
Milk (optional)
Sugar (optional)
Water
PROCEDURE
If the tigernuts are fresh, you go straight into making this drink. However, if it is dried you may want to fist soak it for at least 4 to 5 hours before blending.
Place tigernuts in blender, blend until smooth.
Place in a sieve and drain out the juice using enough water.
Use the tiger nut milk as the liquid, put back in blender then add diced mangoes.
Put milk and sugar (optional for those not using diary or sugar).
Then until smooth.
Voila…
Ready to drink.
N.B You can refrigerate mangoes prior to give a thicker consistency or refrigerate drink after making it. As you desire.
It’s been like forever but I promise that I have so many things to share here.
I will try to share gradually.
I will be sharing this recipe with a touch of my own uniqueness…
ABOUT
Moi Moi is baked ground beans. It is of Nigerian origin.
It is made by first cleaning the beans, removing the skin after rigorous cleaning then adding spicy condiments, fish then seasoning. Afterwards, boiling for about hour.
It is eaten with any cereal, bread, cooked gruels.
N.B The opportunity of powder beans flour is also used which is what I am using.
INGREDIENTS
Beans powder
Salt
Seasoning cubes
Crayfish
Dried fish
Tomato paste/fresh tomatoes
Curry powder and Thyme
Soy sauce
Boiled Eggs
Vegetable oils
Sweet Potatoes
PROCESS
Add ingredients: beans powder, diced sweet potatoes, salt, seasoning cube, soy sauce, crayfish, smoked and dried fish, curry and thyme.
N.B grounded onion and garlic would be great. I used the powder form.
Then the tomato paste/fresh blended tomatoes (this will regulate the amount of water you will put)
Afterwards add water and mix properly until it is has a sticky form. It shouldn’t be watery and shouldn’t be thick for a better cooked outcome.
It should look like this:
Boiled eggs have been added to the mixture.
You may add vegetable oil when mixing or afterwards. The vegetable oild helps the bean cake easy to be removed after cooking.
Then cook for 1 hour.
It should come out looking like this:
Final serving:
I ate mine with slices of bread. Other popular ways it is eaten is by using pap, oats, garri or with rice, spaghetti.
I will confess that I had some topics to share but I dragged my feet a lot.
Today, I will share just a little on this vitamin I love so much.
I most probably have shared some of these on other blog posts but see this as another version.
Do You Know Your Vitamins?
We have water soluble vitamins and fat soluble vitamins.
The major difference between them is that water soluble are not stored in the body and therefore are needed to be taken regularly to maintain their levels in the body.
Both classes are important for healthy body functions.
Water Soluble vitamins include:
B1
B2
B3
B5
B6
B9
Vitamin C
Fat Soluble vitamins:
A
D
E
K
Vitamin C
This is also known as ascorbic acid.
It is a vitamin needed for healthy body function. It is the friend of tissue repair. It is high in antioxidants which protects the body cells from oxidation and continously provides electrons and absorbs oxidising agents and prevents cellular breakdown.
It is needed for basic cellular reactions which involve the immune system.
It is important in the synthesis of collagen that is needed for skin health and mantainance.
It also has anti-infective properties due its acidic content.
It indirectly prevents anemia by increasing absorption of iron thus reducing iron deficiency anaemia.
Vitamin C is the friend of your skin. If you can, eat it well.
It is rich in antioxidants and helps your wounds heal faster.
It has some anti-aging properties, if you want, get the serum.
Vitamin C is the friend of your tisssues and has a lot of protective and productive properties.
Deficiency
Scurvy is one if the well known deficiency and symptoms includes:
Bleeding gums
Painful gums
Swollen gums etc
Indirect deficiencies include anaemia due to Iron deficiency as Vitamin C is needed for its absorption.
Sources
They include the citrus family: orange, tangerine, grape fruit, lime, lemon etc

Vitamin C can be used on the skin as a facial serum or added to skin products as they help reduce wrinkles and act as anti-aging agents due to the breakdown of collagen caused by the aging process.
N.B It is advisable to start using anti aging products from age 25
It can also be taken as tablets supplements and is relevant in alleviating symptoms of flu.
Possible side effects and Contraindications
Vitamin C may cause gastrointestinal upset and in patients suffering from peptic ulcer, it may flare up abdominal discomfort. This can be said to be because of the increased gastric motility and acidity which will flare up symptoms. Therefore, it is advisable that these people minimise the intake of food containing high content of ascorbic acid.
So what are you planning to do?
I did advise that you take vitamin C regularly and enjoy the benefits it does to your skin and body.
It helps bowel movement and relieves constipation, so you may want to try more oranges.

Today I will be sharing with you my first video. This recipe is super yummy with an extra drink recipe.
I subtitle it: The Igbo girl’s way of making soupy noodles.
Also, it is an ASMR translated as Autonomous Sensory Median Response and consists of focusing on specific surrounding sounds with interrupting the flow. So in this video, you hear more of utensils clanging softly, water bubbling, nylon bags opening and ingredients crunching.
After watching, kindly subscribe to my YouTube channel and leave a like as well.
Here we go…..
Enjoy an extra view…..
The milk drink was shared as well and it is a quite a refreshing flavour.
Today, I’ll share on a fruit that is well known in Nigerian and has a fondness built around it.
It is called Agbalumo in Yoruba and Udara in Igbo.
It is currently the fruit in season in my location and as a lover of it, I try to buy it whenever I am opportune to.
It has a unique flavour that could be either sour sweet, sour, or very sweet depending on how ripe it is.
An interesting property it has is that you can use it to make chewing gum. This is mainly associated with the sour ones which are not fully ripe. After eating the fleshy part of the fruit, it turns to gum on chewing it more consistently.
This fruit is rich in Vitamin C and Calcium. It has laxative properties and its back which is high in fiber is good for bowel movement.
I would have loved to try making a juice out of it but I forgot. It will certainly have a rich pulp on blending, with a similar flavour as tamarind in terms of its biting flavour.
In summary, this fruit is good for you but should not be eaten in excess to avoid over stimulation of the bowel.
I thought I would be able share recipes, tips, or reviews before Christmas but oops…I was unable.
This is me saying Merry Christmas to you.
I hope you had a pleasant celebration.
I had and would like to share that as you wat and have fun, do not forget to share. Do not eat excessively. Avoid overspiced meals and sugary drinks especially in large quantities.
Hopefully, I may get to drop some recipes or reviews before the year is over.
