I will share a simple recipe with you. One you can use to make home made tasty meal for wither breakfast or as a snack.

Bread is a staple in many parts of the world, the middle eastern parts more precisely. I have had the opportunity to live in Northern Africa where bread is a daily meal and I have had the opportunity to eat different types of bread.

Recently, I have been making pan bread alot and I will share the easy recipe with you.

Ingredients

  • Flour
  • Yeast
  • Water
  • Butter/Oil
  • Salt
  • Sugar (optional)
  • Herbs ( eg nutmeg, leaves optional)
  • Egg (optional)

PROCEDURE

Add flour (according to desired quantity) to a bowl, two pinches of salt, (adding sugar is based on preference, however you aren’t making sweet pie, so it should be at most twice the quantity of salt), and butter. Mix together.

Dry ingredients go first.

(If you are using eggs, add it before the water)

Mix yeast and warm water (this aids the dough to rise faster).

Add to mixture and knead.

If dough is sticky, add more dry flour until paste is smooth.

(N.B I do not use measuring cups, I measure offhand).

You rub butter or oil or dough to give it a soft finish. Cover bowl and allow for at least an hour with maximum of 2 to 3 hours.

I prefer using butter to oil.

Cut dough into smaller chunks, using dry flour roll out and spread until flat.

Butter/oil in pan, on moderate heat, place your flat dough and turn over after every one minute.

You should have a brown finish when cooked.

Time for each bread reduces as pan gets hotter.

Voila! Pan bread completed.

Serve with your favourite sauce.

TIGER NUT MILK MANGO SMOOTHIE

Hello!

I have a lot of smoothie recipes to share with you.

I’ll share this recently made one with and share the rest later.

Ingredients

  • Tiger nuts (dried or fresh)
  • Sweet mangoes
  • Milk (optional)
  • Sugar (optional)
  • Water

PROCEDURE

If the tigernuts are fresh, you go straight into making this drink. However, if it is dried you may want to fist soak it for at least 4 to 5 hours before blending.

Place tigernuts in blender, blend until smooth.

Place in a sieve and drain out the juice using enough water.

Use the tiger nut milk as the liquid, put back in blender then add diced mangoes.

Put milk and sugar (optional for those not using diary or sugar).

Then until smooth.

Voila…

Ready to drink.

N.B You can refrigerate mangoes prior to give a thicker consistency or refrigerate drink after making it. As you desire.

MOI MOI combo O.R.A’s way

It’s been like forever but I promise that I have so many things to share here.

I will try to share gradually.

I will be sharing this recipe with a touch of my own uniqueness…

ABOUT

Moi Moi is baked ground beans. It is of Nigerian origin.

It is made by first cleaning the beans, removing the skin after rigorous cleaning then adding spicy condiments, fish then seasoning. Afterwards, boiling for about hour.

It is eaten with any cereal, bread, cooked gruels.

N.B The opportunity of powder beans flour is also used which is what I am using.

INGREDIENTS

  • Beans powder
  • Salt
  • Seasoning cubes
  • Crayfish
  • Dried fish
  • Tomato paste/fresh tomatoes
  • Curry powder and Thyme
  • Soy sauce
  • Boiled Eggs
  • Vegetable oils
  • Sweet Potatoes

PROCESS

Add ingredients: beans powder, diced sweet potatoes, salt, seasoning cube, soy sauce, crayfish, smoked and dried fish, curry and thyme.

N.B grounded onion and garlic would be great. I used the powder form.

Then the tomato paste/fresh blended tomatoes (this will regulate the amount of water you will put)

Afterwards add water and mix properly until it is has a sticky form. It shouldn’t be watery and shouldn’t be thick for a better cooked outcome.

It should look like this:

Boiled eggs have been added to the mixture.

You may add vegetable oil when mixing or afterwards. The vegetable oild helps the bean cake easy to be removed after cooking.

Then cook for 1 hour.

It should come out looking like this:

Final serving:

I ate mine with slices of bread. Other popular ways it is eaten is by using pap, oats, garri or with rice, spaghetti.

I enjoyed this bowl of deliciousness.

Monster Balls

Hello and welcome after many weeks.

I am sorry for not sharing with you and for being inconsistent on this blog.

I have had this recipe for four months probably and I have not been able to share.

It is a simple recipe mainly for fun and if you are vegan, this will work well for you.

N.B This is my recipe and is shared for your enjoyment. Do not sell it.

Ingredients

  • Whole purpose flour
  • Rough wheat flour
  • Curry powder
  • Salt
  • Pepper
  • Seasoning cubes
  • Dried leaves
  • Palm oil
  • Baking butter
  • Groundnut oil
  • Baking powder (optional)
  • Water

Procedure

Mix the two types of flour.

Add dry ingredients such as baking powder, salt, pepper, curry powder and seasoning cubes according to taste.

Add butter and palm oil and mix.

Then add water and make sure the consistency remains firm. If it gets sticky add flour to compensate.

Then add dried leaves to the mixture.

Set your oven to medium.

Carefree your mode of picking up individuals lumps. It is called monster balls because of the safe. No need to smoothen it.

If you have a baking sheet, then great!

After completing your desired number.

Put it in the oven and allow to bake for atleast one hour.

Voila!

Strawbanapp Oreo Snack 🍨

It’s been so long since I posted. I have had recipes to share but I have dragged my feet too long.

Today, I will share a yummy snack you can make at home.

I enjoyed it so much plus it is a healthy yummy pack.

The name though 😂😂

Ingredients

Bananas

Iced Strawberries

Apples

Powder Milk

Sugar

Oreo biscuits

Procedure

Dice bananas and apples and set aside.

Peel off cream from oreo biscuits and then mash the biscuits.

Put strawberries and sugar in a bowl and mash together.

Add milk.

Mix until a nice paste is formed.

Add apples, bananas and oreo crumbs and mix together.

N.B If you wish, you can the oreo cream when you are mixing the strawberry and milk or simply leave it from the mixture.

Add final result in a bowl, cover and put in the refrigerator.

Depending on how fast your deep freezer works, it should be iced in few hours.

Fiegg Spaghetti

I am here after a long time.

I will confess: I have edited so many meals to share but I have been unable to bring myself to share them.

Today I will share a simple way to enjoy pasta.

I know you will love it.

Ingredients

  • Pasta
  • Vegetables
  • Fish
  • Eggs
  • Oil
  • Spices
  • Salt
  • Seasoning cubes
  • Tomatoes
  • Onions
  • Garlic
  • For extra hotness: Chilli
  • Water

Procedure

Boil hot water and add pasta to cook. Drain and seet aside.

Dice onions, garlic, and tomatoes.

Add moderate oil to pan. Without allowing to heat up, add onions and garlic and stir.

Add seasoning cubes and pinches of salt.

Add spices as well and stir.

If you are using fresh fish: cook first, season it as mildly as possible.

(I used sardines)

Add tomatoes and allow a broth to form. (Add chilli at this point)

Add pasta and stir.

Allow for 10 to 15 minutes.

Crack and whisk eggs and pour into the pan.

Stir together allowing to cook for extra 5 minutes.

You an add your diced vegetables (we do not want them over heated)

Voila! Ready to enjoy…

Sorghum Crackers

Welcome

Today, I will share a snack I tried at home. It was a result of a cooking accident but it turned out fine and more delicious more than I expected.

Let us dive into the ingredients and procedure.

Ingredients

  • All Purpose Flour
  • Sorghum flour
  • Irish Potatoes
  • Salt
  • Seasoning cubes
  • Oil
  • Water
  • Onions and garlic
  • Any extra spices you prefer

Procedure

Peel Irish potatoes with onions and garlic.

Put in a blender and blend until smooth.

Pour into desired quantity of all purpose flour (measurement should be half of the sorghum flour).

Mix then add Sorghum flour and mix together.

Add salt, spices and water. Mix until a smooth dough continency is gotten. Be careful with water to avoid excess.

Add mildy until consistency is gotten.

The extra flavour of your crackers depends on the oil you use.

I used soya and groundut oil to make mine.

Put oil on pan and set at moderate heat.

Roll your dough and cut into desired shapes.

Put into the oil and fry unitl brown.

This snack is quite filling and satisfactory.

3 minimal meals to make when you are broke 💸

Welcome to today’s post.

I will share three meals that have helped me when I did not have ingredients to make a full meal.

I hope it helps you too.

Requirements

You will need basic food items like:

  • Flour (Wheat, all purpose, sorghum). Have a type of flour.
  • Onions
  • Rice
  • Potatoes
  • Seasoning
  • Salt
  • Oil

Aditional

Eggs, fish, beans or a source of animal or plant protein.

1st Option: Spicy Buns

Mix your flour with your spices. If you have yeast or baking powder, good for you.

Mix and fry….

Wheat buns 😌

2nd Option: Plain or Sweet Bread

Mix your flour with yeast or baking powder then mix with water. If you have sugar then good for you.

Mix and allow to rise, if no raising agent was added then bake straight away.

Note. You can interchange the spicy buns as sweet and the plain or sweet bread as spicy bread. ✌🤗

3rd Option: Onions Sauce

I use this a lot 😀

If you do not have eggs, meat, fish or any plant protein you would still enjoy this sauce.

All you need to do is to dice and fry your onions and add your spices and salt to taste.

Rice would go beautifully with this sauce. Potatoes too.

If you have additional protein, good for you.

Fermented Bread Buns with Caramel Topping🍮

Welcome.

Today, I will share this simple recipe with you.

If you are new here, be sure to follow for simple recipes and tips that are healthy.

Yeast ferments dough and causes it to expand and have the unique fluffiness that Bread has. In today’s recipe, yeast was used differently

Ingredients

  • Flour
  • Yeast
  • Eggs
  • Water
  • Sugar
  • Vanilla flavour (or flavour of choice)
  • Coconut flakes
  • Oil/butter
  • A pinch of salt

Procedure

Dissolve desired amount of yeast in water. Add desired sugar and vanilla flavour.

Cover bowl and leave over night (or for at least 6hours)

Measure flour according to liquid.

Add whisked eggs.

Add a pinch of salt.

Mix and knead dough until consistentency is soft.

Add coconut flakes and knead again.

Oil oven pan.

Preheat oven for 5-10 minutes

Put dough in pan and bake for 30 minutes to 1 hour.

TOPPING

Add sugar and vanilla flavour (or desired flavour) into a small pot or available utensil that can be used over the stove.

If food colouring is available, you can add 😊.

Heat this combination, stirring until caramel is formed.

Spread over buns to decorate..

Voila!

Ready to eat.

Note

The taste may turn out unusual but is it quite interesting.

Making Pan Bread 🍞

Welcome again…..

Today, I will share a very simple recipe that you can make comfortably at home.

Bread is one of the oldest meals made in homes. It is very popular in the Middle East and Arabic culture. It is considered as the most important meal, hence making a part of every meal.

I love to eat this simple bread, it has a special taste and until you try, you would not understand its unique tatse.

In Sudan, it is called “esh

There is the flat type the long type. The flat type is more fluffy and heavy. I enjoy eating both.

Recently, tried this pan bread and was lucky to get it at an almost similar texture to the one I eat from the local bakery.

That is what I will share with you today 😁

Ingredients

  • Whole purpose flour
  • Wholemeal wheat flour
  • Nutmeg (optional)
  • Salt
  • Yeast
  • Water

Procedure

Measure desired quantity of whole purpose flour into bowl.

Be very liberal when adding yeast, the flufflier, the better 😅.

Add a pinch of nutmeg and salt (this depends on how you like it)

When adding water, add a quarter of the quantity of flour. If its not enough, add mildly.

Knead thoroughly for about 10 minutes.

Allow to allow for 2 hours or more.

TO THE PAN

Smear pan with oil (very minimal oil use) and set on moderate heat (not too hot please so it can bake properly)

Flatten out desired size of dough and smoothen with the wholemeal flour. It helps improve texture.

Spread the flattened dough in pan and allow to bake for 5 to 10 minutes on each sides. Turning gradually with a flat spoon at intervals.

And voila…. Ready!!

Depending on how much dough you get from the yeast, you may have to repeat this procedure until the dough is finished.

I tried it twice.

The second time, I coated the dough with sugar before putting in the pan. It gave it an extra brownish finish (as if I coated it with eggs)

N.B I used minimal sugar so it did not affect the plain taste much. The bread was only mildy sweetened. Also, because I used coconut flakes, it was not as plain as the previous bread.

This is a great option if an oven is unavailable plus it does not take a lot of time to bake.
